なりよし is a good example which I found it from a blog. What makes it special? It offers home-made ramen and uses local pork to bring customers real local taste.
Soup base is the soul of a ramen store. At なりよし, the soup base is made of Okinawa pork bone and fishes which is very rich in taste (perfect to my friend but a bit too salty to me). Together with the tender Japanese bbq pork and perfectly cooked egg, the taste is certainly awesome.
Tsukemen is a twist of ramen, which people have it after dipping in a separate bowl of soup. To allow the dry ramen carries the soup, the soups served with tsukemen is usually thicker and taste stronger.
Be careful when you have these dumplings, its juice may spread everywhere after bite.
